Additive-Free Fining – Molecular Filtration
Palate Fining Using Molecularly Imprinted Polymers
For those looking for a more efficient and environmentally sustainable fining solution, we use amaea’s molecular filtration system to help winemakers achieve the sensory benefits of fining – without the need for additives.
By removing the use of fining agents, wineries are able to:
- Maintain label integrity: Vegan, organic, allergen free, etc.
- Mitigate loss from racking and reduced wine transfers
- Significantly reduce waste streams
- Reduce the number of steps and time required for palate fining
Low-impact production process using regenerable polymers
Designed for precision, amaea’s molecularly imprinted polymers (MIPs) selectively captures the phenolic compounds affecting the mouthfeel of wine.
As the wine is filtered, the target molecules bind to the MIPs. Once saturated, the MIPs are regenerated using an eluent, ready to be used again.
The result is a solution which focuses on capturing only what is needed using a regenerable, low-impact production process.
